three b’s Jalapeño Jam Bacon Poppers

INGREDIENTS: 12 jalapeños sliced in half and seeds removed, 1-8 oz brick of cream cheese, 1/2 cup three b’s jalapeño jam, 1 cup extra sharp shredded cheddar cheese, 12 slices of bacon cut in half

INSTRUCTIONS: Preheat the oven to 400 degrees, line a large baking sheet with foil or parchment paper, soak 24 toothpicks in water, cut the jalapeños in half, and using a spoon, scoop out the seeds (use kitchen gloves if necessary, and if you like a little more heat, leave a few of the seeds.) Smear about a spoonful of cream cheese into the hollowed out jalapeños, add a teaspoon or so of jalapeño jam on top, sprinkle some of the shredded cheese on top, wrap with a slice of bacon, and spear with a toothpick. Place in the oven, cook for about 30-35 minutes or until the bacon looks crispy.
